Click on the questions below to learn more about Neuchatel Chocolates: What type of Chocolate does Neuchatel Chocolates use to make their chocolate confections?
Neuchatel uses Swiss Chocolate. The superb texture of Swiss Chocolate, which feels significantly more silken on the tongue than most domestic products, is a result of 75 hours of being smoothed by granite rollers in a process called conching.
Swiss Chocolate arrives at the Swiss Chocolatier’s in Oxford in 16-pound blocks. White and milk chocolate are used immediately, but the fine dark chocolate must age at least six months to deepen its character before the Master Chocolatier deems it ready to use in his recipes.

Who is the Swiss Chocolatier?
Neuchatel's chocolate magic can be directly linked to our 5th generation Swiss Chocolatier, Albert A. Lauber V-Oxford, Pennsylvania's very own Willy Wonka. Albert A Lauber v. is known as Neuchatel Chocolates’ Swiss Chocolatier. Albert began studying the art of fine chocolates as a child in his father’s chocolate shop and bakery that clings to the side of an Alpine mountain in Achseten, Switzerland, near Bern. At age 16, he began an official apprenticeship with a baker a few towns away while continuing to work with his father. He continued his apprenticeship at several of the finest chocolate shops in Switzerland, including Chocolaterie Arn and Sprenger in Geneva and the noted Confiserie Abegglen in Bern. Albert chose finally to settle in Chester County, Pennsylvania in 1982.
